More than a million hand wrapped dumplings a year. Every one of them folded by hand.

That's roughly 2,700 on an average day, pleated by our crew of grandmothers. The wrappers start with flour we import from Japan. The rest is patience and practice.

In Japan, slurping your noodles isn't rude. It cools them on the way in and shows you're enjoying every bite.

A few more customs we love: sipping broth straight from the bowl is perfectly polite, and ramen is meant to be eaten while it's hot. Two we gently skip: standing chopsticks upright in a bowl and passing food from chopstick to chopstick. In Japan, both echo funeral rites.

Tonkotsu has been our best-selling bowl since the day we opened in 2017.

We like to think your broth says a little something about you. Tonkotsu is the timeless classic. Grandma's 5-Spice Duck, made from our family's recipe, is an old soul. Red Curry is first on the dance floor.

A top bid at Kagoshima's first tea auction this spring was the highest since at least 1989.

The world fell in love with matcha, and Japan's 2026 tea auctions show it. Tencha, the leaf that becomes matcha, sold for about 80% more in Kagoshima than last year. Second-harvest tea is going for close to four times its 2024 price. And turning a field over to tencha takes two to three years, so supply can't catch up overnight.

It makes every cup of our Matcha Milk Tea feel a little more special.

The world ate about 123 billion servings of instant noodles in 2024. China and Hong Kong alone ate 43.8 billion.

The U.S. came in sixth at 5.2 billion. We have a soft spot for a late-night cup of noodles too. But there's something special about a noodle made in-house from flour we bring over from Japan, cooked to order and set in a broth that took its time.
