Chilled yellow bell, orange zest 🍊, and leek gazpacho - roasted peppers - pumpernickel croutons. We love this soup! It goes great with this weather. Serve it as a COLD soup or even as a sauce over roasted salmon. You can absolutely achieve creaminess and still make a great vegan dish. The pureed vegetables make it silky and added almond milk can make it even creamier. It’s a perfect vegan dish! 🤤🌿

It’s perfectly packed in the right nutrients to keep your system healthy and hydrated during the summer heat.
