🍕🍅 PIZZA PEOPLE 🍅🍕

Great pizza has a story, and Neapolitan pizza has centuries of history behind it. Let's explore where it all began!

The earliest recorded “pizza” was a Focaccia like flat bread with toppings, eaten by the Roman Empire. Then, around 1730, tomatoes were brought from Peru to the Italian Peninsula when the Spaniards were traveling to America. 🍅 Upper class individuals thought the fruit was poisonous and preferred meat over fruits and vegetables. Lower working class wives fed their fisherman and tradesman husbands flatbread with tomato sauce and called it “Pizza Marinera”.

In 1889, Raffaele Esposito, a popular chef in Naples, Italy was requested to create pizzas for Queen Margherita of Savoy. He created a pizza with tomatoes, mozzarella and basil. He arranged the mozzarella to mimic a flower shape as Margherita translates to “daisy”. The colors of the pizza were designed to mimic the Italian flag.
She loved it so much that she had a thank you letter sent, stating it “were found to be delicious”. The “Margherita”, which was then sold in his pizzeria, was named after the queen. Since the ingredients were so common, historians believe that margarita style pizza already existed far before Esposito made it for the Queen.

Today, authentic Neapolitan pizza dough in Italy is made from water, salt, yeast, and refined wheat flour from Naples. It ferments for 12 hours to multiple days and then is hand stretched. It is topped with raw San Marzano tomatoes, and Mediterranean water buffalo mozzarella. It is then cooked in an 800-900 degree brick oven for 60-90 seconds creating the iconic bubbly crispy exterior.
