🌱 Funny thing about green coffee... when you look at it closely, it really doesn't look as we imagine it does, and it doesn’t appear to be very green either. 🤔

The Guatemalan control coffee from the Fermentation Project joins another bright Guatemalan coffee with fruit accents; an intensely rustic Yemeni coffee, and a syrupy sweet, dark-toned Sumatran dry process in today's additions. 🍒 Link in comments!

We had a lot of fun tasting the coffees as part of the Fermentation Project, but we had a lot of lingering thoughts afterwards. Thompson, Dan, Jarrett and Mike got together to recap our experience, but also debrief on the different, big-picture ideas that cropped up for us, like how further standardizing processing could lead to loss of local tastes and traditions. This is just a sliver of our 45 minute conversation—watch the rest at the link in comments! 💻

Kenya's wet processing is unique to the region, the result of a need to slow down to avoid crowding drying beds and efficiently manage labor. These decisions ultimately contribute to delivering the bright acidity you experience in the cup, especially as something harmonious to the other flavors that arise. ☕️ Learn more about Kenyan coffee in our Coffee Library—link in comments!

Back in 2023, on a trip to Inzá, Colombia, we took a wrong turn somewhere in San Antonio and found ourselves at a panela production site. How lucky! Sometimes, we'll have panela as a tasting note for a green coffee—it refers to the minimally processed cane sugar cakes you'll see in this clip. You might taste a mix of caramel, vanilla and florals. Panela is noted to be best in Pitalito and Pedregal. It's also refered to as piloncillo or chancaca in other regions of Latin America. 🍬

Here's another round up of coffee reviews from customers ☕️ We're really fond of seeing the different ways folks review coffee, including what each person focuses on first—from acidity to roast level, to bold flavors!

🌱 Back in 2011 we tested the KitchenStir, a multi-purpose cooker, intended for cooking stews, fondues, mixed veggies, etc. The manufacturer hooked us up with a test unit modified to reach a higher temperature than the production unit to see how well it would work as a roaster. Unfortunately the KitchenStir failed to be the next appliance in line after the electric popcorn popper as a go-to DIY home roasting device. The pan never got hot enough to roast through 1st crack in a decent amount of time and the lid trapped a lot of condensation so it was hard to keep the roasting coffee dry. Also, the rotating arm kept coming loose. Oh well, it was worth a shot.

If you like the idea of this type of roasting, Google the "Stir Crazy/Turbo Oven" (SCTO) method. We haven't tried it but a lot of folks use it successfully. Have you ever tried SCTO or repurposing one of your non-coffee machines into a roaster?

A punchy, berry-toned Costa Rican red honey process; a fruit-forward yet delicately aromatic Ethiopian dry process; a nutty, bittersweet Guatemalan coffee, and a juicy, sweet but complex Kenya AA lot are today's additions. 🍒 Link in comments!
