CONTROVERSIAL 🚨 everyone has their own way of doing this dish and the last recipe video got called out for not being a recipe…. So this time we went all out!! Here’s a simple and flavorful recipe for rice and beans:

Ingredients:
- 1 cup long-grain rice (rinsed thoroughly)
- 1 can (15 oz) kidney beans (drained and rinsed)
- 1 small onion (chopped)
- 2 cloves garlic (minced)
- 1 scotch bonnet pepper (chopped)
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/4 teaspoon ground allspice
- 2 cups coconut milk
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions:

- Rinse the rice thoroughly under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky.

- In a large pot or skillet, heat the olive oil over medium heat.
- Add the chopped onion. Sauté for about 5 minutes until softened.
- Add the minced garlic and cook for another minute until fragrant.

Cook the Rice
- Add the rinsed rice to the pot, stirring to coat it with the spices and oil.
- Pour in the coconut milk and bring the mixture to a boil.
Add Spices
- Stir in the ground cumin, smoked paprika, and ground allspice. Cook for 1-2 minutes to toast the spices, stirring constantly.
- Reduce the heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and the liquid is absorbed.
- Once the rice is cooked, gently stir in the kidney beans. Cover and let sit for 5 minutes to heat the beans through.
- Season with salt and pepper to taste.
- Fluff the rice with a fork
