In Valldemossa, this side of the Tramuntana, in the village George Sand once called a place planted between heaven and earth, everything defers to what arrives from the kitchen: shrimp fritters, ceviche, scallops, and a trilogy of nigiri where Tokyo and Lima finally feel close.

A wind comes down from the Tramuntana and moves through everything — water against stone, leaves answering above. Rosemary and lavender arrive the same way they always have, unplanted, simply part of these hills.
