This week’s Cheese of the Week: Ewephoria! 🐑🧀✨

We can almost guarantee this is unlike any other sheep milk cheese you have ever tasted before. Ewephoria is a Dutch Gouda-style cheese made from pasteurized sheep’s milk, aged 12 months. The name is of course a play on the words ewe and euphoria, because this cheese is a decadent experience – nothing short of euphoric! Developed specifically for those who crave sweetness, it is wickedly delicious. With sweet notes of butterscotch and caramel, the minerals and saltiness from the coastal area the sheep graze on also come through. The balance of sweetness and saltiness makes this cheese a great standalone dessert-style cheese; an accompaniment to fresh figs, pears, and grapes; and a match for salty, cured meats like Prosciutto, Lonza, Coppa, and other fine charcuterie .

This week’s Cheese of the Week: Roquefort! 🧀✨🇫🇷

Roquefort is one of the world’s most famous blue cheeses. A genuinely distinctive taste, it offers a complex profile of flavors - tangy, creamy and earthy at the same time. It is slightly moist, but also crumbly in texture. It pairs well with crusty bread, fruits, and sweet w**es.

The cheese is made in southern France from the raw milk of a specific breed of sheep called Lacaune, which graze in the limestone-rich pastures of the region. This unique terroir gives Roquefort its characteristic taste.

In France, Roquefort is colloquially referred to as the “King of Cheese”, although Italy (Parmigiano Reggiano) and England (Stilton or Cheddar) would take umbrage to that claim. But one thing is for sure, only cheeses aged in the natural caves of Roquefort-sur-Soulzon may bear the name Roquefort, as it is a protected designation of origin (PDO).
